From the Daily Freeman, Sept. 16, 2008 School lunches go 'green' in Red Hook By Jan Larraine Cox , Special to the Freeman RED HOOK - The average student eating an average school lunch generates 67 pounds of waste per school year, according to the Web site wastefreelunches.org. That translates to 18,760 pounds of lunch waste for the average elementary school each year. Locally, a number of schools have begun to tackle the problem by starting a waste-free lunch program. This fall, youngsters in Red Hook will carry a re-usable box filled with waste-free lunches to school, thanks to a new "green" lunch program at Mill Road Elementary School. Karin Lipke, who serves on the school Parent Teacher Association's Green Committee, said much of the waste that would normally be thrown away will be composted or turned to chicken feed. |
